Rosenborg is the name of a beautiful castle in Denmark that was built in the 17th century by King Christian IV. The high renaissance style of the castle reflects his love for art, architecture and beauty and is one of the most beautiful castles in Denmark.

The castle is rich in décor, art and historical artifacts and was built for leisure, luxury and enjoyment for the busy king. The castle has been the setting for many festive occasions with the lively king as the perfect host. Exquisite food and delicate wines accompanied music the king composed himself. Delightful menus featured specialty cheeses as treasured delicacies.

Like the castle, the Rosenborg brand of cheeses is part of the Rosenborg Castle tradition of high quality craftsmanship.

The exquisite Rosenborg cheeses range from white mould cheese over blue and white mould cheese to blue mould cheese. At the moment, there are eight different cheeses in the Rosenborg family available in Australia.

Mould cheese has been manufactured in Europe for more than a thousand years. Cheese making is a way of preserving milk. Cheese has great nutritional value, but it also deserves attention because of the great variety of flavors, aromas and textures offered.

Some of the Rosenborg cheeses originate from very old recipes and some are new cheeses created exclusively for the Rosenborg brand. The secret of the Rosenborg cheeses is found in the different cheese cultures added to the milk; the fat content, the moisture content and ripening process differentiate the unique types of Rosenborg cheese.

The old members of the white mould family are the Brie and Camembert. Brie originates form Paris, where it was considered to be the king of cheeses by the French Court.



Camembert originates from the French region of Normandy. This was a cheese produced by the farmers for their own use.

The Blue and White mould cheeses are made by combining the blue and white fermentation cultures: white mould (characterized by growing on the outside of the cheese) and blue mould (which is growing from within the cheese). The Blue and White cheeses are not strong, but have a rich, aromatic taste.

The Blue Cheeses are the strong tasting cheeses. The type of fermentation culture used originates from the south of Europe. The traditional Danish Blue belongs to that type of cheese and has won many prizes over the years. As for all the Rosenborg cheeses, the high quality and the delicious taste of the cheeses is a trademark.
