PEAR AND WALNUT PANCAKES WITH BLUE CHEESE
INGREDIENTS

Batter:
2/3 cup plain flour
1 egg
1/2 cup milk
Oil or vegetable shortening to cook pancakes

Filling:
2 medium, ripe dessert pears, peeled and diced
1oz walnut pieces, chopped
1/4 cup brown sugar
1 pack ROSENBORG® Extra Creamy Danish Blue Cheese, cut into cubes
Maple syrup or icing sugar

SERVES 4-6

METHOD

1. Sift flour into a bowl, make a well in centre and break in the egg. Beat together with a wooden spoon, adding the milk a little at a time until you have a smooth batter. Allow to stand whilst making the filling.
2. In a bowl combine all the filling ingredients and
mix well.
3. If batter is too thick add in a little water to thin down. Heat oil or fat in a small pan and cook pancakes in the normal way. Serve filled with the cheese mixture and sprinkled with icing sugar or drizzled with maple syrup.
