3 tbsp. butter
2-3 large green onions, or shallots, halved or quartered
6-8 snow peas
125g baby new potatoes, cooked with skins on
1 medium zucchini
3-4 cherry tomatoes, halved
4 eggs, beaten
Salt and black pepper
1 pack (125g) ROSENBORG® Danish Brie, cut into slices
SERVES 2 |
1. Melt butter in a medium sized frying pan and gently sauté the onions, zucchini and snow peas for 5 minutes. Add the potatoes and cook, stirring, for further 5 minutes, then add the tomato halves.
2. Pour in beaten egg with seasonings and cook as you would for a normal omelette. When the egg just starts to set, place the cheese slices around surface and continue cooking until cheese is melted.
Serve at once with crusty bread and a salad. |
